This carefully designed itinerary spans centuries of history, imposing architecture, unique landscapes, and a rich cultural heritage that defines the most authentic identity of the region.

The journey begins in Loeches, a town with royal status, noble roots, and a monastic spirit. Its heritage jewel is the impressive Monastery of the Immaculate Conception, founded in the 17th century by the Count-Duke of Olivares. Inside, it houses the pantheon of the Dukes of Alba and valuable works of art. Walking through its streets is like reliving history, surrounded by churches, noble coats of arms, and peaceful corners that preserve the legacy of another era.

The route continues southwest to San Martín de Valdeiglesias, a land of vineyards, castles, and water. The majestic Castle of La Coracera, dating back to the 15th century, bears witness to the presence of Queen Isabella the Catholic in this region. At its feet lies Madrid’s most famous inland beach, the San Juan Reservoir—an ideal spot to combine culture and nature. Here, historical heritage coexists with the energy of active tourism and wine tourism.

The journey culminates in San Lorenzo de El Escorial, a UNESCO World Heritage Site. This town is home to one of the most important monumental complexes in Europe: the Royal Monastery of El Escorial, which includes a palace, pantheon, library, basilica, and museum. But its appeal goes beyond that: historic gardens, cobblestone streets, Mount Abantos, and cultural gems like the Coliseo Carlos III—one of the oldest Baroque theaters still in use—add to the richness of this monumental experience.

  • Confit suckling pig with roasted apple puree and Pedro Ximénez reduction. Suckling pig cooked at low temperature to achieve a tender texture, accompanied by the sweetness of apple and wine. Pairing: Red Crianza de la Sierra de Gredos – full-bodied red wine with soft tannins that complement the richness of the suckling pig.
  • Pil-pil cod loin on a bed of ratatouille from La Mancha. Cod cooked at the right point, with the emulsion of pil-pil and the traditional flavour of ratatouille. Pairing: Godello – white wine with good structure and mineral notes that harmonize with cod.

  • Goat cheesecake with red fruit jam and walnut crumble. A local take on cheesecake, using goat cheese from the region and a crunchy touch of walnuts. Pairing: Moscatel Dulce – sweet wine with floral and fruity notes that enhance the dessert.
